Terroir : Clay-limestone, silt.
Grape Varieties : 86 % Rolle, 14 % Grenache Blanc.
Age of the vines : 20 years old.
Wine culture : Tillage without chemical weeding, organic amendements, control of yields, sustainable agriculture.
Yeld : 50 hl/ha.
Wine raising : Cold pre-fermentation process during 12 hours, selection of pressed grapes, cold settling of the juice, traditional vinification in thermo-regulated stainlees-steel vats.
This wine unveils a beautiful aromatic intensity, one is quickly plunged into white peach scents, together with lemon and fresh grass perfumes. The nose is delicate and tangy at the same time. The mouth is precise and sleek with a mineral finish.
FOOD AND WINE PAIRING
Delicious with a crumbled Crab with notes of verbena and citrus fruit. Perfect for an aperitif and with seafood like a fish in sauce.
