THE ESTATE

Terroir : Clay-limestone.
Grape varieties  : 85 % Syrah, 15 % Grenache.
Age of the vines : 20 years old.
Wine culture : Tillage without chemical weeding, organic amendements, control of yields, sustainable agriculture.
Yield : 50 hl/ha.

WINEMAKING PROCESS

Wine raising : Traditional vinification process, matured in stainless-steel vats during 10 months.

TASTING

Intense and deep ruby colour. A delicate nose with notes of redberries such as raspberry and cherry. On the palate, tannins are refined and blended. One can find back some cherry notes as well as spicy notes such as licorice, bringing to this wine complexity and a fine lenght to the mouth.

FOOD AND WINE PAIRING

Lovely with a Spanish and Italian cured meat board. Superb as an accompaniment to “Stewed rabbit sauce chasseur and green olives”.
