COTEAUX VAROIS EN PROVENCE PROTECTED DESIGNATION OF ORIGIN
Terroir : Clay-limestone, silt.
Grape varieties : 85 % Syrah, 15 % Grenache.
Age of the vines : 60 years old.
Wine culture : Tillage without chemical weeding, organic amendements, control of yields, sustainable agriculture.
Yield : 40 hl/ha.
Wine raising : Pre-fermentation maceration, manual punching down, 4 weeks vinification and maturing in oak barrels during 12 months.
A very complex red wine dominated by spices such as : cinnamon, licorice and cherry. Then some other toasty notes come up offering a wide range of aromas.
The wine is full on the palate, expressing spices and fruits. Tannins are soft and tender and evolve in a fresh and structured harmony.
FOOD AND WINE PAIRING
This structured wine will be a great companion to strong ans tasty meats like little or big game, meat in sauce, mushrooms and headcheese.
Perfect wine with a cheese platter and its chutney fig. Gorgeous combinated with a young deer, parsnip, Topinambur and pepper sauce.
