COTEAUX VAROIS EN PROVENCE PROTECTED DESIGNATION OF ORIGIN

THE ESTATE

Terroir : Clay-limestone.
Grape varieties : 65 % Grenache, 20 % Syrah, 6 % Tibouren, 5 % Cinsault, 4 % Rolle.
Age of the vines : 35 years old.
Wine culture : Tillage without chemical weeding, organic amendements, control of yields, sustainable agriculture.
Yield : 50 hl/ha.

WINEMAKING PROCESS

Wine raising : Cold pre-fermentation process during 12 hours, selection of pressed grapes, cold settling of the juice, traditional vinification in thermo-regulated stainlees-steel vats.

TASTING

One finds a great aromatic complexity that give elegance and maturity to the wine. Notes of strawberries together with crashed raspberries melds into a lovely mixture of citrus peels and anis.

The palate is full with a beautiful roundness in the mouth which gives way to a lively and weathered finish. It is a very well balanced wine.

FOOD AND WINE PAIRING

With an aperitif, while having a seasonal salad or some grilled fish. It will be divine with a seasonal red fruit soup flavoured with hibiscus.
