Cuvée La Chapelle Red
COTEAUX VAROIS EN PROVENCE PROTECTED DESIGNATION OF ORIGIN
Terroir : Clay-limestone.
Grape varieties : 85 % Syrah, 15 % Grenache.
Age of the vines : 20 years old.
Wine culture : Tillage without chemical weeding, organic amendements, control of yields, sustainable agriculture.
Yield : 50 hl/ha.
Wine raising : Traditional vinification process, matured in stainless-steel vats during 10 months.
Dominated by the grape Syrah within its own tipicity and aromatic identity, one finds back all the aromatic features of this grape variety : bloody notes of wild red berries, as well as chocolate and garrigue notes.
The mouth is very delicate, fluid but with a great texture. Tannins are already well melted.
FOOD AND WINE PAIRING
A delight with grilled meats or as an accompaniment to a paëlla or with cow’s cheese. Excellent with a pigeon’s breast with its carcasse juice and cranberries served with root-vegetables.
